Sweet Potato Home Fries
An easy, healthy take for a fresh source of finger grabbing carbs.
- 2 sweet potato
- 1.25 tbsp olive oil
- 1 tbsp parsley (minced)
- Sea Salt (to taste)
- Black Pepper (To Taste)
- Preheat oven to 350ºF.
- Rinse and dry sweet potatoes. Cut ends off, then cut into slices an inch thick. Cut these slices into sticks.
- Place sweet potatoes on a baking sheet. Drizzle with olive oil, then add parsley and salt. Toss with your hands to coat well.
- Place in the oven and roast for 15 minutes. Stir and flip the sweet potatoes over, then roast for an 20 more minutes, or until soft enough to pierce easily.
