Kelp Noodles with Cilantro Pesto

Cilantro Pesto Kelp Noodles

  • 1 12- ounce bag kelp noodles
  • ¼ cup olive oil
  • ½ tbsp olive oil
  • 1 cup cilantro
  • ½ cup walnuts
  • ½ cup pine nuts
  • ¼ cup parsley
  • 1 garlic clove
  • 1 tbsp fresh-squeezed lemon juice
  • ⅓ tsp Sea Salt
  • ½ tsp Black Pepper
  1. Drain the kelp noodles on paper towel and allow to dry.
  2. Heat ½ tbsp olive oil in a skillet. Add walnuts and pine nuts and toast until golden brown, stirring often. Let cool.
  3. In a Vitamix or blender, add cilantro, parsley, garlic, ¼ cup olive oil, salt, pepper, and lemon juice. Add cooled nuts. Blend to a smooth consistency.
  4. Pour over noodles and toss until mixed
