Cilantro Pesto Kelp Noodles
- 1 12- ounce bag kelp noodles
- ¼ cup olive oil
- ½ tbsp olive oil
- 1 cup cilantro
- ½ cup walnuts
- ½ cup pine nuts
- ¼ cup parsley
- 1 garlic clove
- 1 tbsp fresh-squeezed lemon juice
- ⅓ tsp Sea Salt
- ½ tsp Black Pepper
- Drain the kelp noodles on paper towel and allow to dry.
- Heat ½ tbsp olive oil in a skillet. Add walnuts and pine nuts and toast until golden brown, stirring often. Let cool.
- In a Vitamix or blender, add cilantro, parsley, garlic, ¼ cup olive oil, salt, pepper, and lemon juice. Add cooled nuts. Blend to a smooth consistency.
- Pour over noodles and toss until mixed
