Yucca Cakes

  • 2 large yucca
  • 2 tbsp olive oil
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper
  1. Fill a pot with about 3 inches of water and 1 tsp salt and bring to a boil.
  2. Peel yucca and cut into ¾-inch discs.
  3. Place in boiling water and cook for 7 minutes.
  4. Preheat oven to 350ºF.
  5. Drain yucca pucks and place on a baking sheet. Drizzle with the olive oil and rub well with your hands. Sprinkle with salt and pepper.
  6. Roast for 7 minutes, flip each puck over with a spatula, then cook for another 7 minutes or until golden brown.
