Marinated Kale Salad

  • 8 cups kale
  • 2 tbsp olive oil
  • 1 tsp Sea Salt
  • Juice of ½ lemon
  1. Wash kale and dry. Cut the spine off by slicing down on either side of it. Rip kale into bite-size pieces and transfer to a glass container. Alternatively get bags of pre cut and washed kale.
  2. Pour lemon juice, olive oil, and salt over the greens, and massage in well. Cover and place in fridge overnight.
