Salmon Cakes
Keeping a couple of cans of salmon stocked away makes for a great (and delicious) emergency dinner.
- 2 cans salmon (14oz cans, skin and bones removed)
- 3 eggs
- 3 tbsp tomato paste
- 3 cloves garlic (minced)
- 1/4 cup mustard sauce
- 1 tbsp coconut oil (spray works too)
- Crack and beat the eggs
- Add the rest of the ingredients to the bowl and mix
- Grease muffin tins and distribute mix into tins (should fill 12)
- Bake at 425ºF for 10-15 minutes
