Yucca Cakes
- 2 large yucca
- 2 tbsp olive oil
- 2 tsp Sea Salt
- 1 tsp Black Pepper
- Fill a pot with about 3 inches of water and 1 tsp salt and bring to a boil.
- Peel yucca and cut into ¾-inch discs.
- Place in boiling water and cook for 7 minutes.
- Preheat oven to 350ºF.
- Drain yucca pucks and place on a baking sheet. Drizzle with the olive oil and rub well with your hands. Sprinkle with salt and pepper.
- Roast for 7 minutes, flip each puck over with a spatula, then cook for another 7 minutes or until golden brown.
