Turkey Meatballs
- 1 pound ground white-meat turkey
- ½ large yellow onion
- ½ cup almond flour
- 3 garlic cloves
- 2 tbsp parsley
- 2 tsp olive oil
- Sea salt & black pepper (to taste)
- Preheat oven to 350*F.
- Chop garlic and parsley.
- Mince the onion.
- Heat olive oil in a pan, then add garlic and onions. Saute until the onions are translucent.
- Add ground turkey, breaking up the pieces with a large spoon and stirring constantly so it cooks evenly, about 7-10 minutes. Cook until pink in turkey is gone.
- Remove from heat and dump into a large bowl. Add almond flour and parsley. Mix with a large spoon (or your hands) until the texture is even.
- Shape into 8 2-ounces balls. Place on a baking sheet lightly greased with olive oil.
- Place baking sheet on the middle shelf in the oven.
- Bake for 10 minutes, turn each turkey ball over, then bake for 5-10 minutes.
