Turkey Meatballs

  • 1 pound ground white-meat turkey
  • ½ large yellow onion
  • ½ cup almond flour
  • 3 garlic cloves
  • 2 tbsp parsley
  • 2 tsp olive oil
  • Sea salt & black pepper (to taste)
  1. Preheat oven to 350*F.
  2. Chop garlic and parsley.
  3. Mince the onion.
  4. Heat olive oil in a pan, then add garlic and onions. Saute until the onions are translucent.
  5. Add ground turkey, breaking up the pieces with a large spoon and stirring constantly so it cooks evenly, about 7-10 minutes. Cook until pink in turkey is gone.
  6. Remove from heat and dump into a large bowl. Add almond flour and parsley. Mix with a large spoon (or your hands) until the texture is even.
  7. Shape into 8 2-ounces balls. Place on a baking sheet lightly greased with olive oil.
  8. Place baking sheet on the middle shelf in the oven.
  9. Bake for 10 minutes, turn each turkey ball over, then bake for 5-10 minutes.
