Broc-cauli Chowder with Bacon

  • 4 cups broccoli (chopped and steamed)
  • 4 cups cauliflower (chopped and steamed)
  • 2 cups chicken or beef broth
  • 4-6 cloves of roasted garlic
  • Sea salt & black pepper to taste
  • 4 slices of bacon (baked and chopped)
  1. To save time you can get frozen bags of broccoli and cauliflower and microwave them. Otherwise prep your veggies by chopping and steaming them.
  2. Using a blender, liquefy the broccoli with half of the broth until smooth.
  3. Repeat the process with the cauliflower and the remaining broth.
  4. Add the roasted garlic to either of the batches before blending again.
  5. Combine the soup purees in a large pot over medium heat.
  6. Add sea salt and black pepper to taste.
  7. Simmer for 10 minutes, stirring to combine the two purees.
  8. Add more stock, ¼ cup at a time, if the soup is too thick.
  9. Top with chopped bacon.
